Amanda’s Lighter King Ranch Chicken Casserole

There are many different ways to make King Ranch Chicken, however, I compiled several different recipes, gave it a healthy overhaul and wanted to share it with fellow Catheletes, especially since next month is the Texas roadtrip and I live in Texas, but will not be able to attend the roadtrip. An interesting side note: The King Ranch located in southeast Texas is one of the largest ranches in the world. The old legend goes that this dish was fixed for the cowboys working on the ranch!
