I have always tried to eat eggs for their health benefits, but I don’t like them. Now that I have come up with this recipe, it is easy to eat them!
Ingredients Asparagus, fresh, 15 spear,cooked and cut in pieces Mushrooms, fresh, 5 medium , sliced Onions, raw, 0.5 medium , chopped Garlic, 1 clove , minced Egg substitute, liquid ( like Egg Beaters), 0.75 cup 2 Egg Whites 1/2 C Skim Milk Reduced Fat Mexican Shredded Cheese, 1 cup 1 Raw Tomato (Medium, whole), sliced
Ingredients 1 bag of coleslaw mix (shredded cabbage) (without creamy dressing) 1/4 to 1/2 cup of frozen carrots and peas 2 to 4 egg or egg whites to taste 1 tbsp of extra virgin coconut or olive oil pepper 1 small onion (any color, I like red for color) diced scallions (green onions) to taste
Ingredients 2 egg whites 1 cup canned pumpkin 3/4 cup evaporated skim milk 3 tbls sugar (I have used 1.5 tbls of splenda sugar blend) 1/2 tsp cinnamon 1/8 tsp ginger 1/8 tsp all spice dash of salt ( i usually leave out) Directions: 1. beat egg whites till foamy. Stir in rest of ingredients.
