Although I know how healthy eggs are, I have never liked them. I have finally developed a clean-eating, uber-healthy egg salad that I love!
I have always tried to eat eggs for their health benefits, but I don’t like them. Now that I have come up with this recipe, it is easy to eat them!
My mother used to add hard-boiled eggs to her guacamole to stretch the amount to feed us all. I actually like it better that any other guacamole I have ever had, plus it has the added benefit of extra protein!
I’ve heard of and made Peanut Butter Toast with slices of Banana before. Today I wanted to be adventurous and try something new. I came up with this recipe for a snack today. It was so GOOD!! I had to share this one with everyone.

I originally made the recipe as a healthy snack for my toddler, who absolutely LOVES them, but I enjoy the cookies as much as he does!
Whisk together eggs, applesauce, oil, sugar, and vanilla. Fold in zucchini. Add dry ingredients and beat. Fold in blueberries. Lightly spray 3 mini loaf pans with cooking spray….
Gently combine all ingredients in a medium bowl until just mixed. Season with sea salt to taste. Service like salsa with baked tortilla chips or atop grilled poultry or fish.
