The flavor of these sweet potatoes is enhanced so much by the garlic and the thyme – I think it reheats really beautifully too.
This was a family recipe that I converted to something healthier last year and it worked. My family typically called these Zucchini Pancakes and mixed the batter up with the eggs and fried in butter as you would a pancake. I needed a different option and decided to change to egg substitute and bake in non-fat cooking spray in the oven.

This healthy recipe is intense on flavor but quickly assembled. We have serve it with ½ cup of brown rice, but it would be fine by itself, too. If your shellfish are frozen, set them in the fridge while you’re at work and they’ll be thawed by the time you return home.
Delicious and nutritious, can leave out the shrimp, or add tofu for vegitarian meal
I created this recipe by combining several recipes that sounded good. You can add in your own vegetables based on what you like. You can also add some cooked shrimp or shredded chicken with some Asian sauces that you like.
