I have always tried to eat eggs for their health benefits, but I don’t like them. Now that I have come up with this recipe, it is easy to eat them!
My mother used to add hard-boiled eggs to her guacamole to stretch the amount to feed us all. I actually like it better that any other guacamole I have ever had, plus it has the added benefit of extra protein!
Can serve over brown rice, pasta. I added it over a nice piece of baked salmon.
Gently combine all ingredients in a medium bowl until just mixed. Season with sea salt to taste. Service like salsa with baked tortilla chips or atop grilled poultry or fish.
