This was a family recipe that I converted to something healthier last year and it worked. My family typically called these Zucchini Pancakes and mixed the batter up with the eggs and fried in butter as you would a pancake. I needed a different option and decided to change to egg substitute and bake in non-fat cooking spray in the oven.
Thin rice vermicelli noodles, stir-fried with onion, celery, carrots and cabbage. In the Phillipines, this dish is served to celebrate someone’s birthday, as the noodles represent long life.
