Ingredients
1 pound frozen chopped spinach
1 tablespoon coconut oil
1/2 cup finely chopped yellow onion
1/2 pound mushrooms, finely chopped
1/4 cup coconut milk
1/2 cup small-dice celery
1/2 cup chopped parsley leaves
1 pound ground organic turkey
1 medium garlic clove, minced
1 teaspoon sea salt
1 1/2 teaspoons ground black pepper
1/4 teaspoon ground nutmeg
2 large eggs
Optional: Top with bacon slices and tomato paste
Directions:
1) Preheat the oven to 350 degree Fahrenheit
2) Defrost the spinach put in a coriander and press out as much liquid as you can
3) Saute the mushrooms and onions in the coconut oil until soft with salt and pepper to taste
4) Puree celery, parsley, and coconut milk (I used a Magic Bullet)
5) Place all ingredients in a large bowl (ground turkey, puree, spinach, spices, eggs etc)
6) Use your hands to mix the ingredients together
7) Transfer mixture into 12 greased muffin tins and bake for 60 minutes until brown and slightly crisp on top
8) If using bacon, place bacon on top of each muffin and broil at the end for 3 minutes
