Ingredients
4 oz. Fat Free Cream Cheese
1/4 cup Parmesan cheese, fresh grated
2 cloves garlic, pressed
1/4 cup green onion, chopped
1 Roma (plum) tomato, diced
1 avocado (firm but not hard), cubed
8 oz cooked shrimp, tails removed, cut into bite size pieces or 1 cup cooked cocktail shrimp
2 cups cooked whole wheat pasta, penne pictured
Directions:
Cook pasta, drain and set aside. Place cut shrimp and veggies in a bowl and set aside. Place cream cheese, parmesan cheese and garlic in a small sauce pan and heat over medium heat stirring constantly with a nylon spatula. Rinse pasta again so the pasta is nice and wet, place in large bowl, spoon cheese over pasta and mix. Gently fold in shrimp and vegetables. Serve immediately or refrigerate and serve chilled. Serves 3-4
