Lean Pork Meatloaf with Baked Crunchy Noodles
Lean Pork Meatloaf with Baked Crunchy Noodles

Ingredients

Olive Oil Cooking Spray
4 oz. whole wheat pasta (Spaghetti or angel hair)
1 tsp extra virgin olive oil,
2 cloves of garlic
1 small yellow onion, diced
1 piece of whole wheat bread torn into bite size pieces
1 egg
1 lb extra lean ground pork
1 peeled carrot cut into circles
1 tsp ground ginger
10 stems of fresh cilantro, plus extra for garnish if desired
1 tsp low sodium soy sauce

Directions:

1. Spray a 9X5 loaf pan with cooking spray. Cover baking or cookie sheet with foil. Make sure there is about 4 inches of space between top and bottom oven racks and preheat to 350 degrees.

2. Prepare pasta according to package directions, drain and toss with 1 tsp olive oil. Spread onto baking sheet so there are no clumps.

3. In a large bowl combine, garlic, onion, pork, egg, ginger, soy sauce, cilantro, and 2 tbsp water. mix well. Add in torn pieces of bread and mix again. Dump mixture into loaf pan.

4. Put loaf pan on top rack and noodles on bottom rack. Bake for 20-25 minutes.

5. Pull noodles apart into 4 servings and top with carrot and extra cilantro. Divide meatloaf into 4 servings and enjoy!!
