Ingredients
1/4 cup spelt flour
1 tsp aluminum-free baking powder
1/2 tsp cinnamon
1 tsp chia seeds
1 tsp flax meal
1 tsp honey
1 Tbsp coconut oil, melted
1/3 cup unsweetened vanilla almond milk
Cooking spray
5 medium strawberries
1 tsp raw agave nectar (or honey)
1 tsp fresh lemon juice
Directions:
Spray griddle with nonstick spray and preheat to 350 degrees. Whisk the spelt flour, baking powder, cinnamon, chia seeds and flax meal together in a medium bowl. Add the honey, melted coconut oil and almond milk and whisk until smooth. Ladle by tablespoonfuls onto griddle and cook until each side is golden brown. The pancakes may not bubble like traditional pancakes, but when they are set on the edges, they will be ready to flip.
For the topping:
Slice strawberries and toss with agave nectar (or honey) and lemon juice and spoon on top of pancakes.
