Lemon Poppy seed protein cake

Ingredients

3 Eggland’s Best egg whites
1/2 scoop of protein (Trutein Lemon Merengue)
1/4 cup oats, blended in a cooffee grinder.
1 tsp baking powder
1 tsp poppy seeds
1/3 cup shredded zucchini

 

Directions:

Preheat the oven to 340 degrees.
Meanwhile, in a small bowl mix the egg whites, protein, grinded oats, baking powder, poppy seeds, until mixed well (I use a fork), then mix in the zuchini.
Pour in a small greased baking dish.
Bake for 25 min
Serve warm, make it ahead of time the night before. Just put it in the micriwave for 30 sec or more and enjoy with a cup of coffee.
