Campfire Biscuits

Ingredients

2 cups oat flour
1 Eggland’s Best egg
1/2 cup of lowfat milk
sea salt and black pepper to taste
dash of baking powder

Directions:

Preheat cast iron skillet, cast iron griddle, or other griddle (or grill over campfire) on medium heat on stove with a bit of coconut oil (or your favorite cooking oil). Mix all ingredients together until doey and spoon drop biscuits into skillet cooking on one side for 5 minutes and then flipping and cooking until cooked through. You may also pop in a hot oven for 10 minutes to cook. (Great for cooking over a cast iron skillet over campfire for that smokey campfire taste). Serve alongside any meal as a warm comforting side dish, or make your own gravy for them using more of the oat flour, and top with a little natural unsalted butter. Oat flour is just ground up whole oats, so it’s low glycemic, high fiber, heart healthy, and gives a wonderful moist texture like that of oatmeal. It’s warm, comforting, and declicous!! And no guilt afterwards. Just a happy belly and a healthy heart! Enjoy!
