Ingredients
1/4 cup of quick cook, steel-cut oats
3/4 cup of boiling water
Ponzu sauce or soy sauce, to taste
Sriracha (AKA “Rooster Sauce) hot sauce, to taste
Chopped green onions, to taste
1 or 2 Eggland’s Best eggs, cooked to your preference
Roasted sesame oil to taste (optional, but tasty)
Directions:
This can be made with any type or any quantity of plain oatmeal, this is just how I prepare it.
Scoop out 1/4 of oats and place in microwave-safe bowl, pour 3/4 of boiling water into bowl, and cook for 2-2:30 in the microwave.
Prepare egg to desired preference. (I like sunny side up, so I can pierce the yolk and mix it into the oatmeal, but I have made this with scrambled eggs, hard-cooked, etc…)
When oats are complete, season with ponzu sauce (or soy sauce) and sriracha sauce.
Place egg on top, sprinkle with chopped green onion, drizzle roasted sesame oil and eat!
I know a savory oatmeal might require a leap of faith for people, but it’s a really tasty and filling breakfast.
