Ingredients
2 filets (about one lb) Black or Red Grouper
2 tablespoons Seafood seasoning (buy it premade or make your own: cayenne pepper, garlic powder (not salt!), paprika, black pepper)
1 cup seasoned bread crumbs
4 tablespoons of Olive oil (may need more, depending on your skillet size)
Directions:
1) Add the olive oil to your skillet, making sure it just covers the bottom.
2) Heat the oil on medium. Add a dash of your seafood seasoning in order to flavor the oil, before the fish is added.
3) Place the seasoned bread crumbs on a plate (store bought or make your own)
4) Add the seafood seasoning
5) Mix the bread crumbs and seasoning thoroughly
6) Coat each fillet in the bread crumb mixture, and then place in the skillet.
7) Turn the burner up to med-high and cook 5 minutes per side. If your fillets are thicker, they made need an additional min or two per side.
8) Fish are done when they are no longer opaque. The grouper is a fish that looks very white when done. You will have to use a fork to check for doneness, but pulling apart one of the fillets just a bit.
