1/2 cup quinoa 1 cup low sodium chicken broth 2 tbsp fat free plain Greek yogurt 1 wedge low fat Swiss laughing cow cheese wedge (soft wedges) 1 tsp tomato paste 1 tsp Parmesan cheese 1 tsp crushed garlic Salt and pepper to taste 1 chopped spring onion Low fat cheddar on top
Cook the quinoa with 1 cup chicken broth until the quinoa is cooked. Sautee spring onion in pan sprayed with nonstick cooking spray (optional). Combine quinoa and spring onion with salt,pepper, garlic, tomato paste, cheese wedge, Parmesan, and yogurt until all combined through. Cut up pepper into 2 and place in baking dish; spoon mixture on top of pepper, with shredded cheese on both halves. Bake 400 degrees for 30 minutes or until warm. Optional: top with low fat spaghetti sauce or salsa.
