1 bag baby spinach (pre-washed)
1 whole cooked rotisserie chicken (any flavor)
1 cup pecan halves
1 cup dried cherries
1/2 cup crumbled feta cheese (can use blue cheese)
Dressing:
1/3 cup honey
1/4 cup Dijon mustard
1/4 cup cider vinegar
Directions:
Divide spinach onto 8 dinner plates
Chop up chicken and place on top of spinach
add pecans, cherries, and cheese
For Dressing:
whisk together the following:
1/3 cup honey; 1/4 cup Dijon mustard; 1/4 cup cider vinegar and pour over salad and mix well
