Ingredients
8 oz whole wheat pizza dough
1 c cherry tomotoes or about 3-4 plum tomatoes
1/4 c red wine
2 T olive oil
1 t dried basil
1 t dried oregano
1 t fennel seeds
1/4 c fresh ricotta cheese
1/4 c fresh mozzarella cheese
1/4 c feta cheese
2-3 T grated parmesan cheese
Fresh basil
Black pepper
Flour for rolling out dough
Directions:
Pre-heat oven to 450 degrees.
Make quick sauce:
Over high heat, put 1 tablespoon olive oil in pan.
Crush tomatoes and throw into pan.
Add red wine, dried herbs, and black pepper to taste.
Break up tomatoes as the cook.
Allow sauce to continue cooking on high to reduce to a thick sauce while you prepare the crust.
Prepare crust:
Roll out pizza dough very thinly on a floured surface.
Flip over a cookie sheet, spread remaining olive oil on bottom of sheet and lay dough on sheet.
Prepare pizza:
Spread cooked sauce over dough.
Drop small spoonfulls of ricotta and fresh mozzeralla over pizza.
Sprinkle feta cheese over pizza.
Lay basil leaves on pizza and sprinkle on parmesan cheese.
Sprinkle black pepper over pizza.
Bake until brown and bubling, about 12 minutes.
