Ingredients
1 cup whole wheat flour
2 Tbsp packed brown sugar
1 tsp baking powder
¼ tsp salt
½ tsp ground cinnamon
¼ tsp ground nutmeg
1/8 tsp ground cloves
½ cup canned pumpkin
1 egg
1 Tbsp vegetable oil
1 ½ cup non-fat milk
Toppings: Syrup, Yogurt, Fruit, or Canned whipped cream (only 15 calories per 2 Tbsp! – Pictured about ½ cup or 60 calories worth, way less sugar than syrup)
Directions:
Whisk all ingredients together. Spray waffle iron with cooking oil spray. Cook waffles according to your iron’s instructions. Top with whipped cream, syrup, fruit, or yogurt. Makes 4 Belgium sized waffles.
This recipe is easily doubled. If you need more, do not triple or quadruple, the seasoning ratio will be off. These freeze really well also, just put into the toaster oven for 5 mins or so to reheat..
