Ingredients
2 chicken breasts, cut into strips
Olive oil
1 red bell pepper, cut into cubes
1 tomato, cubed
1 green bell pepper, cubed
1 yellow bell pepper, cubed
3 Green onions, chopped
4 cups vegetable or chicken broth
1 can pinto beans
1 can black beans
Garlic powder
Black pepper
Sea salt
Colby Jack cheese
Directions:
Saute the chicken strips in the olive oil.
Add the broth to a sauce pan.
Add the peppers, tomatoes and onions to the broth.
Add the sauted chicken to the broth.
Add both cans of beans, drained, to the broth.
Season with garlic powder, black pepper and sea salt to your taste.
Bring to a boil, then reduce to a simmer and let simmer for 30 minutes.
Serve in bowls, adding cheese when you serve.
