Ingredients
2/3 cups of cashew flour (can be purchased from Trader Joes can also substitute with almond flour)
1 cup of unsweetened coconut flakes
2/3 cups of sliced almonds
1/3 cup of pumpkin seeds
1/3 cup of coconut flakes
1/3 cup of ground chia seeds (can substitute with flax meal)
1/3 cup of dried cherries
2 teaspoons of cinnamon
1/2 teaspoon of salt
1/4 cup of almond butter
1/4 cup of maple syrup
1/3 cup of coconut oil
2 teaspoons of vanilla
Directions:
Preheat over 350 degrees.
Combine all of the dry ingredients.
Melt and combine all of the wet ingredients.
Stir in the wet with the dry and completely incorporate both. Spread the mixture out of a cookie sheet lined with parchment paper.
Cook for 10 minutes. I typically have to check on it every once in awhile to make sure the ends don’t cook too quickly and mix it up occasionally so that it cooks evenly.
Let it cool so that it hardens and break it up into pieces. Store in an air tight container…ENJOY!!!!
