Ingredients
1 can organic pumpkin (or fresh)
1 cup oats (gluten free if u like) (u could also use 2tbsp coconut flour for low carb)
1 heaping tbsp of raw coconut sugar
2 eggs plus 4 egg whites
1/3 cup cottage cheese
1/4 cup protein powder (or pb2)
2 tsp vanilla extract
1tsp cinnamon
1/2 tsp nutmeg
1 tsp baking powder
Water to desired consistency for pancake batter
Directions:
Blend all the following in a blender and cook as u would pancakes… fluffy, decadent, and good for you! Pumpkin is loaded with potassium and beta-carotene which can help with blood pressure and with eyesight health. These pancakes are also high in fiber, so you’ll be more regular and your tastebuds will enjoy them too!
