Ingredients
Crepe:
3 Eggland’s Best egg whites
1 Tbsp margarine, melted
1/2 cup fat free milk
1/2 tsp vanilla extract
1/2 cup gluten free flour*
dash of salt
Apple Pie Filling:
2 medium apples, coarsly chopped
Apple Pie Seasoning to taste**
Directions:
*Flour: I use Bob’s Red Mill Gluten Free All Purpose Baking Flour (I’m new to gluten free cooking and still learning where to buy specialty flours in my area, so I cheat a little; I found this in the isle with regular flour at my local grocery store). Regular all purpose flour works as well if you are not sensitive to gluten.
** Apple Pie Seasoning: In an empty salt or seasoning shaker, mix 1/2 cup sugar, 1 tsp cinnamon, and 1 tsp nutmeg. You WILL NOT need to use all of this for the crepes, especially if you use naturally sweet apples. Keep the shaker filled for future batches of crepes.
For the crepes: In a medium bowl, whisk together egg whites, salt, vanilla extract, melted margarine, milk, and flour until just combined. Heat a non-stick 8-9″ skillet over medium heat. When the pan is hot, add 1/3 cup of batter and tilt the skillet so the entire bottom of the pan is coated with a thin layer of batter. The batter will cook QUICKLY! As the edges begin to curl, flip crepe over, finish cooking. It takes 2 minutes max to cook a crepe completely. Transfer to a serving plate. Repeat until you have used all the batter. You should get 4-5 crepes.
For the filling: Core the apples and coarsly chop in a food processor. I like to leave the skin on the apples to add a little extra fiber. Place the chopped apple in a microwaveable dish, sprinkle lightly with the apple pie seasoning, and cook on high for 1-2 minutes. If you like your apples a little softer, stir and microwave 1 minute logner. Place a generous spoonful of filling in the center of each crepe, fold over edges, enjoy!
Fun Filling Variations:
Thin layer of peanut butter topped with sliced, frozen bananas
Thin layer of reduced fat or fat free cream cheese topped with sliced strawberries and LIGHTLY spinkled powdered sugar.
Mixed berries and yogurt.
