4 chicken breasts, cut into large chunks
6 garlic cloves, roughly chopped
1/4 c olive oil
2 T favorite variety of mustard (chipotle, etc.)
2 T honey
2 T Braggs liquid aminos
2 T lime juice or pineapple
2 t salt
3/4 t pepper
2 large sweet onions, cut into large chunks
2 or more peppers
Can of pineapple chunks, or fresh
Mix marinade ingredients in a glass 1 cup glass measure for quick preparation as you can put in ingredients without additional measuring utensils by watching the liquid rise in 2 T increments.
Using a large ziplock bag, marinate chicken in sauce for at least one hour.
Take water-soaked skewers and assemble chicken, veggies, and pineapple to your liking. Bake at 400 degrees on parchment-lined jelly roll pan for a out 45 min turning kabobs once, or grill.
Recipe makes about 8 kabobs, for 4 adult servings of 2 skewers each. (1 chicken breast per person).
Serve with rice mixed with a ready-made container of pico de gallo for a fast meal!
