2 tsp olive oil
1 small onion, chopped
10 oz package frozen chopped spinach, thawed
4-5 eggs, beaten
2 c shredded cheese (try reduced-fat Swiss, Muenster, or Feta)
1/2 tsp onion salt
1/4 tsp red crushed pepper
1 tsp dried parsley
Directions:
– preheat oven to 375F
– spray 8″ pie pan with olive oil cooking spray
– sautee onion in oil, add drained spinach, cook for 5 minutes.
– combine eggs, cheese, salt, pepper and parsley.
– add spinach mixture
– pour into pie pan
– bake about 30 minutes or until set
– let cool for 10 minutes
