1 lb pork loin, cut into thin strips
3 TB extra virgin olive oil, divided
1/2 tsp cumin
1/2 tsp onion salt
1/2 tsp garlic salt
1/2 tsp chile powder
1 red or green bell pepper, cut into strips
1 onion, sliced
2 TB lime juice
8 tortillas (whole wheat, low carb)
1. Comine meat, vegetables, 2 TB olive oil, and seasonings, cover tightly and refrigerate for 30 minutes.
2. Heat 1 TB olive oil and add meat mixture.
3. Stir-fry for about 6 minutes or until meat is cooked and vegetables are crisp tender.
4. Add lime juice and remove from heat. Spoon into wamed tortillas.
Optional: add salsa and/or low-fat sour cream
