Ingredients
– 16 oz can of salsa
– 16 oz can of black beans, rinsed
– 1/2 tsp ground cumin
– 1 tsp lime juice
– 8 eggs (Eggland’s Best)
– 8 corn tortillas
– 1/4 c chopped fresh cilantro
– 1/2 TB olive oil
Directions:
1. Mash beans with fork and mix with cumin and lime juice (adding warm water if needed).
2. Cook eggs sunny side up in olive oil until set.
3. Heat tortillas in pan or microwave until hot (1 to 2 min).
4. Spread beans on tortilla, top with eggs, salsa, and cilantro.
