Ingredients
•1 lb chicken breasts, cut into thin strips
•1/2 onion, thinly sliced
•1 clove garlic, minced
•1/2 red pepper, thinly sliced
•1 cup broccoli florets
•1 cup salsa
•1/4 teaspoon crushed red pepper
•salt & black pepper to taste
Directions:
1. Over medium heat, cook the chicken in a few drops of extra virgin olive oil, stirring frequently, until it is no longer pink.
2. Add the onion, garlic, pepper, and broccoli until crisp-tender.
3. Add the salsa, stir to coat. Cook for 1 or 2 minutes. Season to taste with red pepper, salt and black pepper.
Serve alone or over brown rice, quinoa or 100% wheat pasta. Can also be wrapped in a soft tortilla.
