Ingredients
1pkg. Frozen Spinach (10 oz.), thawed and drained
6T. Whole Wheat Flour
12 Egg Whites
2c. Cottage Cheese
1c. Grated or Shredded Cheddar
2T. Applesauce
1/2 Chopped onion
1/2 c. mushrooms
1t. salt
1/2 t. pepper
1t. garlic powder
Directions:
1. Preheat oven to 350 degrees
2. Lightly spray 9″ pie pan with cooking spray
3. Combine all ingredients in large mixing bowl
4. Pour mixture into pie pan
5. Bake for 45-50 minutes or until center is set
Sometimes, I’ll use other vegetables in this recipe depending on what’s in my fridge. It’s also good with chicken breast, turkey added in for extra protein.
