Ingredients
4 tbs. extra virgin olive oil
2 sliced tomatoes
1 chopped clove of garlic
3 boneless skinless chicken breasts cut into strips
1/2 cup white wine
Sea salt and pepper to taste
Directions:
1. Prepare chicken and lightly season with sea salt and ground pepper.
2. Heat oil and garlic over medium heat.
3. Add chicken to skillet and cook for about 10 minutes.
4. Add in the wine and cook for about 2 more minutes.
5. Remove chicken from skillet and keep warm.
6. Saute tomatoes in the skillet until soft.
7. Serve the chicken over the tomatoes and cover with remaining sauce.
8. Add in rice and/or veggie of your choice. I chose to roast some asparagus!
