Ingredients
Small white potatoes, fresh tomatoes from garden, Vidalia onion, brussel sprouts, ground sage
Directions:
We had finished STS so late and didn’t want to eat a heavy meal so opted for this quicky, easy meal! Hit the spot! LOVE summer produce! (Remember, paper plates are EASY too! 🙂
Cut brussel sprouts in half, add any amount of onion to pan and steam for 5-10 minutes with water.
Then, add a bit of EVOO, any amount of ground sage (Optional) to your preference and fry till golden brown.
Boil small potatoes for approx 8 minutes or till tender.
Slice tomatoes and add diced or sliced onion on top.
EASY, PEASY!!!! But Good & Healthy!
