Ingredients
• 2 15 oz. cans of black beans
• Slice of onion
• ½ tsp. Minced garlic
• 2 cup of Veggies (before chopping) of your choice – I always use carrots and broccoli. I’ve also used cauliflower, mushrooms, corn and avocado. Use your imagination.
• 1 Eggland’s Best egg
• 1 tsp. Chili powder
• Scant ¼ cup Buffalo wing sauce
• 2 cups Chia seeds
• 1 cup uncooked oatmeal
Directions:
Rinse the black beans. Put veggies, onion and garlic in food processor and chop until fine. Put mixture in bowl. Put rinsed black beans in food processor to break up the beans a bit. Put beans in the bowl with the vegetables, and blend together. Add egg, chili powder and buffalo wing sauce in mixture and blend. Add chia seeds and oatmeal until mixture has the consistency of hamburger. (You can also use bread crumbs as the binder)
Form the mixture into patties or hot dog shapes. To cook, heat a little oil to sauté in a pan, bake in the oven or cook on your grill. Cook until brown on all sides. Melt cheese on them if you wish, and serve on buns with any condiments you like.
NOTE: Recipe is very flexible and quantities can be adjusted to your own tastes. When I make up a batch, I put the mixture in a zip-lock bag. It can be kept in the refrigerator for at least a week, or the mixture can be frozen. I form my patties or hot dogs as I need them. I have also made Sloppy Joes with the mixture. Our dogs love them, too!
