Ingredients
2 c. Regular Rolled Oats
1 c. Whole Wheat Flour
1 c. White Flour (can omit and use 2 c. wheat flour)
1 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Salt
1 c. Ripe Banana Puree (about 2 bananas)
1 c. Unsweetened Applesauce
1 Egg, lightly beaten
1/4 c. Melted Coconut Oil
1/4 c. Brown Sugar
1 c. Raw Nuts and/or Seeds (Walnuts shown)
1 c. Chopped Dried Fruit (Cranberries & Apricots shown)
Directions:
Preheat oven to 350 degrees. Prepare cookie sheets with parchment paper.
Mix oats, flour, baking soda, baking powder and salt in a large bowl. In a small bowl mix the banana, applesauce, egg, oil and sugar. Add to the dry ingredients and mix. Stir in any combination of nuts and dried fruit.
Drop by teaspoon onto parchment paper. Bake for 12-14 minutes, or until golden brown.
