Ingredients
2 avocados, chopped
1 grapefruit, cut into sections
1/2 c pomegranate seeds
1 T minced red onion
1 T cranberry, or orange juice or whatever is on hand
2 T olive oil
Liquid stevia, to taste (start w/ 10 drops)
Salt and pepper, to taste
Directions:
Place avocado, grapefruit, and pomegranate in bowl. Separately, mix remaining dressing ingredients in another bowl, and gently folding the dressing into the salad to combine.
This tastes awesome in a 100-calorie wrap, as pictured, with spinach, hard-boiled egg, and 1 slice of crumbled bacon for 424 calories.
Or serve on spinach salad without wrap, with an additional egg and additional bacon for 429 calories.
