Ingredients
1 tsp. butter
1 egg, slightly beaten
2 tbsp of flax or chia seed meal
2 tbsp of rice protein powder
1/2 – 1 tsp. ground cinnamon
handful of fresh blueberries
1/2 tsp. baking powder
1 tsp of liquid stevia or 2 tbsp of Davinci Sugar free syrup
Directions:
Spray a mug with olive oil spray, add butter and microwave for a few seconds to melt it. Add the rest of the ingredients to the mug, stir it up well and microwave for one minute. Microwaves vary so watch it and try 45 seconds and if it’s not done, go another 15-20 seconds. You could also add a few chopped walnuts or pecans, or use chopped banana for a banana nut muffin!
When muffin is done, just turn it out onto a plate. Top with a little natural peanut butter if you like! Deeeeeelissshh!!!!
