Ingredients
4 very ripe banana’s
1 cup cooked quinoa
1 cup unsweetened, shredded coconut
1 cup uncooked quinoa flakes (or oatmeal flakes)
1/2 cup coconut sugar (or raw sugar)
1 tbls almond butter (or any nut butter)
1 tsp vanilla extract
1/2 cup dark chocolate chips or chunks (crush a dark chocolate bar into pieces)
1/8 tsp of sea salt
*optional* 1/2 cup walnut/almond/pecan pieces or dried fruit.
Directions:
Pre-heat oven to 380 degrees. In a large bowl, mash banana’s. Add vanilla, almond butter, and coconut sugar (or raw sugar). Add cooked quinoa, uncooked quinoa flakes (or oatmeal flakes), unsweetened coconut and sea salt. Mix until well combined. Add dark chocolate chips (or dried fruit, nuts). Place parchment paper on baking sheet. Drop batter onto sheet, making 10-12 cookies (sizes may vary). Baking times may vary.
