Ingredients
4 already Breaded or grilled wild Cod or any other mild white fish
Half of a head of Iceburg lettuce (sliced thin, shredded)
1 Large Tomato chopped or chunky salsa
4 soft whole grain tortillas
Zesty Ranch Dressing to drizzle on top of taco (Zesty adds a nice kick of flavor) or any favorite healthy dressing
Directions:
Bake the breaded Cod in a 425 degree oven or whatever the manufacturer label says. This brand took 22 minutes
Wrap the tortillas in foil and warm until hot and soft
While the Cod is baking or grilling, shred the lettuce and chop the tomato and set aside
When done, let the fish cool slightly and put it on top of the tortilla, add the veggies and the ranch dressing and enjoy!
