Rueben Kraut Sandwiches

Ingredients

Thousand Island Greek Dressing
1/2 c greek yogurt
1 T olive oil
1 t lemon juice
2 T organic tomato paste
1 t mustard powder
8 drops stevia
1/2 t salt
1/4 c minced onion
1 T pickle relish
pepper, to taste

16 slices nitrate free Roast Beef
1 c sauerkraut
4 slices swiss cheese
Bread/Wrap/Gluten Free Option

Directions:

Mix dressing ingredients, set aside. If using bread, toast ahead and let cool (to prevent added toppings from making bread chewy). Heat oven to 400 degrees, and prepare a cookie sheet with parchment paper and top with bread slices. Spread 2 tablespoons dressing on each toast, followed by 4 slices of roast beef arranged lightly, 1/4 c room temp or warm sauerkraut, and 1 slice swiss cheese.
Bake sandwiches for 5-8 minutes, watching closely as filling heats up and cheese melts. Enjoy and look forward to leftovers – if you have any!
