Ingredients
1 cup quinoa
2 cups of water
1 cup of blueberries
1 cup of chopped mango
1 cup of chopped of cucumber
1/2 cup of dried cranberries
1/4 cup of sliced almonds
1/4 cup of olive oil
juice from one lime
1/4 cup of chopped fresh basil
honey *optional
salt and pepper
Directions:
Clean quinoa through a strainer. Cook 1 cup of quinoa in 2 cups of water with a dash of sea salt. Quinoa is done when all of the water has been absorbed. Let it cool. While the quinoa is cooking chop fruits and prepare dressing.
Mix olive, lime juice and basil. Once quinoa has cooled, add the chopped fruit and salad dressing, toss to combine. Season with salt and pepper. Drizzle with honey (optional). Place salad in the refrigerator for at least an hour.
Serve and enjoy! You can use it as a side or a light snack.
