Ingredients
1-2 chicken sausage (I used chicken sausage from sam’s club stuffed with spinach and asiago cheese or mozarella and garlic). These are 120 calories or less and yummy!!!!
1/2 medium red onion
1/2 red pepper
1/2 medium tomato
mixed greens (your choice) I used romaine and iceburg mix
a few crumbles of reduced fat feta cheese
2-3 tbsp seasoned rice wine vinegar
juice of 1/2 lemon
about 1/4 cup olive oil (or to the consistency of your choice)
salt and pepper to taste
a sprinkle of splenda or stevia
Directions:
Boil or grill the sausage
In a skillet on medium heat, spray olive oil spray and put the onion and red pepper in and cook until onion is slightly browning.
Place the mixed greens in a bowl and when the onion and red pepper is done let it cool slightly and then pour over the greens, which will make the greens wilt a little. If you want your greens more crisp, then let the onion mixture cool, completely then pour over the greens.
Mix the rice wine vinegar, lemon, olive oil, splenda or stevia salt and pepper to taste in a jar and shake it up to mix.
When the sausage is finished, let it cool and then chop it up and add to the greens.
Add the chopped tomatoes and pour over the dressing and then the crumbles of feta cheese, mix and enjoy.
