Ingredients
4 cups shredded cabbage
1 cup shredded carrot
(save time buy prepackaged coleslaw mix in produce…works just as well)
1/4 cup Greek yogurt mayonnaise (recipe follows)
1 tsp. celery seed (optional)
Greek Yogurt Style Mayonnaise
Ingredients:
1 cup Greek yogurt (plain)
2 tsp. cider vinegar
2 tsp. Dijon mustard
2 tsp. honey (or sugar) (even stevia if u prefer)
1 tbsp. extra-virgin olive oil preferably
1 tsp. herb blend seasoning (like Mrs. Dash salt free kind of choice)
Directions:
In a medium bowl, mix together the cabbage and carrot. Add the Greek yogurt mayonnaise and celery seed, if you use it, and stir gently to mix well.
Instructions on how to prepare the greek yogurt Mayo:
Mix all ingredients together until creamy. Refrigerate
TIPS:
** As stated use the already cut and shredded cabbage and carrots in bag found in produce…
Or… If u ike more veggies in coleslaw get the pre-package pre-cut mix in a bag… works perfect & Saves you time**
**refriigerate at least one hour before serving**

You are so WELCOME ElleJay:) I too have been WICKED craving Coleslaw and I started playing around with the greek yogurt idea becuase of seeing greek yogurt on the shelves at supermarkets and didn’t like the ingredients in them so i sat in my kitchen and came up with this… It is REALLY Good, my daughter HATEs coleslaw but LOVES this!!
