(EB), America’s No. 1 branded egg, announced additional improvements to its already nutritionally superior egg.  All EB egg varieties – large, extra large, jumbo, cage-free and organic – now contain four times more Vitamin D and over three times more Omega-3 compared to ordinary eggs.  EB eggs also contain high levels of Vitamin B12 and Vitamin E, and are a good source of Vitamin A and Vitamin B2.  Additionally, they contain 25 percent less saturated fat and 19 percent less cholesterol than regular eggs.

Berry French Toast

Makes 8 servings

Ingredients

4 Large Eggland’s Best eggs

1/2 cup nonfat Milk

1 teaspoon Vanilla Extract

Pinch of ground Cinnamon

8 slices of Light Whole Wheat Bread

Powdered Sugar (optional)

2 cups Berries (Raspberries & Blueberries)

Pure Maple Syrup (optional)

Preparation

Whisk eggs, milk, vanilla extract and cinnamon in a glass pie dish.

Working in batches, dip bread in egg mixture; let soak for 30 seconds on each side.

Spray large nonstick skillet with vegetable oil spray.

Heat over medium heat.  Working in batches, add bread to skillet and cook until golden, about 4 minutes per side.

Transfer to serving plate.  Dust with powdered sugar if desired.  Top with berries.  Serve with warm maple syrup on the side.
