Peach and Cream Pie recipe
Yesterday I got in Tabatacise with burn sets back and core 2. I was completely dripping after! Today is AOLIH, but I can't remember which premix. I am even more sore today that yesterday from doing Legs on Tuesday, I only got in the standing because Little K woke up
I am not starting over on the rotation. I did the first 2 weeks, then did other Cathe workouts for 2 weeks and this week I'm doing week 3 of the the cardio and weights XTrain rotation. I think that committing to a month or more is too much for my brain. I like committing to something for a week, whether it's a premade rotation by me or someone else, or just a framework like 3 days of cardio, 2 days of weights and a day of legs. I took a peek at the Aug rotation and it doesn't thrill me.
Last night's WW meeting went well! I lost another 1.4#! Hopefully I can keep that up!! I was only raw for a day or 2 (and not 100% raw or chocolate free) and when I got my period I had 1 day where I was cramp and there was one moment where the cramps took my breath away, thankfully I was already sitting. But I was better enough after that to go into the pool and Jacuzzi, the jets on my back were really helpful I think, plus the water in general. I will have to remember that for future months: no chocolate, 2-3 days of raw before and water.

Rainy day here so our hike/picnic with friends has been canceled. Hopefully I can get to the library and OfficeMax and find a fun activity or craft to do with the kids. School planning is in full swing. I've decided not to create and input lesson plans into my Homeschool Tracker program. Last year it just seemed like more work than necessary for a few reports at the end of the year for the portfolio. I think I'll still try to input the books they've read as we go, so I can print a reading log. But that's it. The hardest part about my planning this year is going to be figuring out how to put everything in. I think I need to get out of the mind set that each week we need to get every subject in the same way. I'm finding out that our local schools, public and private have been using a rotation schedule of 7 days and then starting the 7 days over again. It's hard to wrap my brain around that!!
Eva- How do you eat only a little of the dark chocolate bar every day?? I think I would eat too much. But it would be fun to try!

Katie- you're house seems like mine this week as I only have my 2, 7 and 9. Hard to get anything done isn't it?
I better get moving. I've been up since 7ish (Little K woke us up at 6) but all I've done is surf the web (looking at homeschool schedules, etc, check email and make muffins for breakfast) Now to decide if I should run my errands now and workout during nap or workout now and do errands later...

Peaches and Cream Pie
from The American Vegetarian Cookbook From the Fit For Life Kitchen

1 standard fruit pie crust
5-6 large peaches, peeled
3 T fresh orange juice
1/2 cup raw cashew pieces
3 T pure maple syrup
1/2 cup water
1 t vanilla extract
1/3 cup sunflower or safflower oil
fresh mint leaves, for
Prepare crust and set in freezer to chill.
Slice peaches in thin half-moons. In a mixing bowl, combine peaches with orange juice and set aside.
Place cashews in a blender with sweetener, water and vanilla. Blend until creamy and smooth. While blender is running on low, add oil in a thin stream, through opening in lid until mixture thickens but is still slightly runny.
Coat bottom of crust with a thin layer of cashew mixture. Add a layer of peach slices in a flower-petal fashion, spread with cashew again and continuing layering, ending with top layer of peaches. Garnish with mint leaves in center of peach “flower”.
Refrigerate for at least 2 hours before serving.
Serves 8.
Standard Fruit Crust
1/3 cup sunflower seeds
1/2 cup sesame seeds
1/3 cup raw pecans or raw almonds
1/3 cup dried unsweetened, shredded coconut
1/2 to 1 cup raisins (enough to make mixture gluey)
1 cup soft dates, seeds removed, about 6 Mejool dates
Grind seeds, nuts and coconut to a fine meal in a food processor. Add the fruit and process, adding additional raisins, as necessary, until mixture forms a ball.
Press mixture into a 9-inch pie plate. The crust will be nearly 1/4 inch thick. Flute the edges with your thumb and forefinger. Crust is ready to be filled.
Yields 1 crust.
Note: 1 - you can substitute any combination of seeds and nuts to equal quantities given in recipe.
2 - If mixture does not ball up, add a few T of apple juice, Almond or Cashew milk or water.
Variation: For a delicious high-energy treat, roll this fruit and nut mixture into walnut size balls or logs, roll in coconut and freeze.
Allison’s notes: I don’t use coconut, because our family doesn’t like it. I normally need to use a whole cup of raisins. Sometimes we have this for dinner with just a salad. Serious food combiners or those with digestive issues would do best to only have this on an empty stomach, since cooked food takes much longer to digest than raw foods. Notes from 7/29/13- I used raw cashews instead of the other nuts and more dates than raising because it is what I had. I needed to add a little water to make the crust form into a ball. I didn’t have sunflower or safflower oil, so I used extra virgin olive oil. It gave it a different flavor for the cream, it was still very good, but I prefer the other oils better since they don’t have such a heavy flavor.
