Eat more sweet potatoes!

Great recipes, thanks ladies! I don't know if I'll be using them YET b/c I'm trying to eat super clean (no oils, butter, very little spices, blah blah freakin-blah, I am SO HUNGRY! ;)).

Tami, I can't seem to find the right NI. I googled it & the info is totally different than what I found in my book last night, so I'm gonna have to go on faith that this guy knows what he's talking about.

I'm actually thinking about getting him together w/my dad since he seems to be very knowledgable about how to GAIN weight. We should all have such problems! :eek:
 
An easy sweetpotatoe recipe is to chop or slice some sweet potatoes and bake them in apple juice. The juice adds sweetness (though I personally think sweet potatoes are sweet enough on their own).
 
I have a killer yam stir fry done indian style. There hasn't been a single person who has come to my home that's had it that hasn't loved it. (yams aren't available really in india so that's why i say indian style.) Yams are awesome because they're naturally sweet so adding hotness to it makes it an great party in your mouth. Let me know if you want it -- I'll try to write it up for you (I don't have any of these things written down, they're all in my head!).
 
I baked 5 of them for about 2 hours. I did the fork & foil thing too. They're soft & mushy, not at all dry.

That said, I'm eating it right now & if not for the cinnamon I think I'd be dry heaving. :eek:

It sounds like you cooked them too long for my taste and probably yours. I'm one who doesn't like them mushy, but still with a little bit of resistance to them. If they're too done, I can't eat them at all.
 
I hated sweet potatoes until I found this recipe:

Take your sweet potatoes (you can peel them if you like) and dice them into 1-inch pieces or slice them into fries.

Toss them in a little olive oil and roast them in a 375 oven until they are done and a little charred on the edges/corners.

Then toss them again with a little more olive oil, some fresh lime juice, coarse salt, cilantro and cayenne pepper to taste.

YUMMY!!!

I can't stand them with sweet flavors but the acidity and salt make these tasty - I call them crack in a bowl because I can't stop eating them.

YES!!! No lie, I JUST made roasted sweet potatoes (hadn't tried the lime and cilantro though....gotta try that next time!) and they are AWESOME! They get all toasty and chewy on the outside and sweet and soft on the inside. YUM!
 
I LOVE sweet potato fries!!! Never tried them with honey before. That sounds really interesting.
I think Nancy may be right that you probably overcooked yours. I don't care for them if they're too mushy, either, so I can relate to your dry heave comment!
 
My neighbor makes awesome sweet potato chips. Also Sam's has bags of sp fries, just bake in oven. I usually add butter, etc. Pringles makes a wonderful chip, I usually end up eating the entire bag. Along with Red, Hot, Blues!
 
Another thumbs up with the fries. Cut, sprayed with light olive oil, sprinkle with a little garlic salt, granulated garlic and some ancho chili powder or chipotle.

Yep, sweet/hot just "plays" in your mouth ! :p

OK, who had sweet taters for breakfast?

I tried it & hey not so bad!!! Although 1/2 wasn't a whole lot. Now let's see how the staying power goes......:confused:

No Nancy, I think that's the only way I could eat them. I make my baked potatoes that way too (at least I did the last time I ate them like 7 years ago :().

Tami, what size are your yams? (why does that sound like a euphamism LOL) Mine are HUGE so a half is plenty for me.
 
My sweet potato breakfast invention:
1 added about 1/3 of a big sweet potato (prebaked--I baked two yesteday, but by the time they were done, I'd already eaten enough of other thiings!) mashed to the last 3 minutes of some cream of buckwheat cereal I was cooking.

Then in the bowl, I put the cereal, some chopped walnuts, some dark agave and some cinnamon (more than planned, because it came out faster than expected, but it's good!) and ground chia seeds. It wasn't mushy enough, so I added a bit of Bolthouse farm chai tea (a soymilk based drink) to it. YUMMY!

(Does anyone else think that most sweet potatos/yams (the ones that are orangie inside and out) look kind of like someone pooped them out? Luckily, they don't taste anything like that...not that I have done a comparative study to find out, I'm just assuming.)

Kind of a personal question don't ya think Laura? ;) If I took 1/2 of the actual sweet pot that would have been different I guess. But I weighed out 1/2 a portion (I know nerdy of me :rolleyes:) that would be 65 grams if I'm not mistaken. I'm a weigh & measure kind of girl - family picks on me terrible for it :(.

OMG. I haven't been around for days and have been wondering about sweet potatoes for some time. Never tried them, know I should be eating them, but had no clue how to prepare them. Great ideas here. Thanks.
 
OK, I just learned sweet potatoes & yams are two completely different animals. I've been told yams taste better, but does anyone know if there's a huge difference in nutritional value? I googled & all I could find was that yams have more sugar (which I suppose makes them taste better). I'm guessing that means more cals. Any input from you wise ladies?
 
I'm not sure about nutritional info., but I personally prefer "yams". Also, not a recipe, but I really like mine baked with some toasted pecans and then cinnamon on top. ;)
