Jen-you really should give lentils another shot. Spice em up! I really like the taco flavored recipe I posted.

Priscilla-so sorry you had such a rough night. 6X?? hope he makes up for it tonight, so you can get some much needed rest. That's such an awful feeling to wake up from a nap without a clue of what's going on!

Here's how the rest of my day went:
L-romaine w ham, mozzarella, tomato, light vinagrette; 2 ravioli (I'm awful about having to take tastes of things--it was off DH's plate :) ), 8almonds (400)
S-3 coconut crème kisses (bad but yum), cheese stick, 3 prunes, 6 soy crisps (225)
D-chick breast, peas, 1/2 potato, small glass wine (400)

all for now...Reese is up from her mini nap. surprise, surprise
 
Dinner was awesome. Yum!
My eats
for the rest of the day:
one Luna bar
10 jelly belly
one glass great red wine
beef edamame pepper sesame stir fry over brown rice
10 flax seed tortilla chips

my day went incredibly well considering I only got five hours of sleep. :confused:

huh? felt like I ate all day. lol Time to freeze some of them cookies.

This morning I got on elliptical and pushed thru 3 miles of Cardio Coach before work. Yeah baby! 5AM workouts are AWESOME!!!

I also got a leek to try Lamb in the Kitchen's leek, asparagus, onion, redpepper garlic steamed veggies! YUMMY!!!

All this lentil talk has me craving lentil soup! I just found this one on foodnetwork.com. It's supposed to be really cold and rainy in Philly tomorrow, so I'm making a pot.

Lentil Soup

Ingredients
2 tablespoons olive oil, plus extra for drizzling
1 medium onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
2 garlic cloves, chopped
Salt and freshly ground black pepper
1 (14 1/2-ounce) can diced tomatoes
1 pound lentils (approximately 2 1/4 cups)
11 cups low-salt chicken broth
4 to 6 fresh thyme sprigs
2/3 cup dried elbow pasta
1 cup shredded Parmesan
Directions
Heat the oil in a heavy large pot over medium heat. Add the onion, carrots, and celery. Add the garlic, salt, and pepper and saute until all the vegetables are tender, about 5 to 8 minutes. Add the tomatoes with their juices. Simmer until the juices evaporate a little and the tomatoes break down, stirring occasionally, about 8 minutes. Add the lentils and mix to coat. Add the broth and stir. Add the thyme sprigs. Bring to a boil over high heat. Cover and simmer over low heat until the lentils are almost tender, about 30 minutes.

Stir in the pasta. Simmer until the pasta is tender but still firm to the bite, about 8 minutes. Season with salt and pepper, to taste.

Ladle the soup into bowls. Sprinkle with the Parmesan, drizzle with olive oil, and serve.
 
Jen, this lentil soup is fantastic! I just use regular lentils, and I use turkey kielbasa. And I cut waaaay back on the oil! I also cut back on the onion a bit. As for the homemade stock? I don't usually make my own stock either.

Lentil Sausage Soup

Prep Time: 15 min Inactive Prep Time: 15 min Cook Time: 1 hr 30 min Level:
Easy Serves:
4 quarts; 8 to 10 servings
1 pound French green lentils (recommended: du Puy)
1/4 cup olive oil, plus extra for serving
4 cups diced yellow onions (3 large)
4 cups chopped leeks, white and light green parts only (2 leeks)
1 tablespoon minced garlic (2 large cloves)
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
1 tablespoon minced fresh thyme leaves
1 teaspoon ground cumin
3 cups medium diced celery (8 stalks)
3 cups medium diced carrots (4 to 6 carrots)
3 quarts Homemade Chicken Stock, recipe follows, or canned broth
1/4 cup tomato paste
1 pound kielbasa, cut in 1/2 lengthwise and sliced 1/3-inch thick
2 tablespoons dry red wine or red wine vinegar
Freshly grated Parmesan, for serving


In a large bowl, cover the lentils with boiling water and allow to sit for 15 minutes. Drain.
In a large stockpot over medium heat, heat the olive oil and saute the onions, leeks, garlic, salt, pepper, thyme, and cumin for 20 minutes, or until the vegetables are translucent and tender. Add the celery and carrots and saute for another 10 minutes. Add the chicken stock, tomato paste, and drained lentils, cover, and bring to a boil. Reduce the heat and simmer uncovered for 1 hour, or until the lentils are cooked through and tender. Check the seasonings. Add the kielbasa and red wine and simmer until the kielbasa is hot. Serve drizzled with olive oil and sprinkled with grated Parmesan.



Homemade Chicken Stock:
3 (5-pound) chickens
3 large onions, unpeeled and quartered
6 carrots, unpeeled and halved
4 celery stalks with leaves, cut in thirds
4 parsnips, unpeeled and cut in 1/2, optional
20 sprigs fresh flat-leaf parsley
15 sprigs fresh thyme
20 sprigs fresh dill
1 head garlic, unpeeled and cut in 1/2 crosswise
2 tablespoons kosher salt
2 teaspoons whole black peppercorns


Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic, salt, and peppercorns in a 16 to 20-quart stockpot with 7 quarts of water and bring to a boil. Skim the surface as needed. Simmer uncovered for 4 hours. Strain the entire contents of the pot through a colander, discarding the chicken and vegetables, and chill. Discard the hardened fat, and then pack the broth in quart containers.
Yield: 6 quarts

Okay, last lentil soup recipe tonight :) This one is spicy.

Bree's Lentil-Tomato Soup
from Cooking Light

Yield: 11 servings. (serving size: 1 cup)


1 tablespoon olive oil
2 cups chopped onion
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon ground red pepper
1/4 teaspoon salt
1/4 teaspoon black pepper
2 garlic cloves, minced
3 1/3 cups water
2 1/3 cups dried lentils
1/3 cup chopped fresh cilantro
3 (14 1/2-ounce) cans fat-free, less-sodium chicken broth
1 (28-ounce) can diced tomatoes, undrained
Chopped fresh tomatoes (optional)
Cilantro sprig (optional)


Heat olive oil in a large Dutch oven over medium-high heat. Add the onion; sauté for 3 minutes or until tender. Add the turmeric and the next 6 ingredients (turmeric through garlic); sauté for 1 minute. Add water and next 4 ingredients (water through diced tomatoes); bring to a boil. Reduce heat; simmer 1 hour.

Reserve 2 cups lentil mixture. Place half of remaining mixture in blender; process until smooth. Pour pureed soup into a large bowl. Repeat procedure with other half of remaining mixture. Stir in reserved 2 cups lentil mixture. Garnish with chopped tomatoes and a cilantro sprig, if desired.

Christine, thank you for all the information you shared regarding John's health. It opens my eyes to all the things I take for granted -- chewing on fists while teething, minor scratches, crawling, falling, etc. Is it inevitable that John will one day have arthritis, or will the medications keep that at bay? As others have noted, I admire your attitude. Tonight's stirfry sounds awesome! I love stirfry dinners -- easy way to get in lots of veggies. I have a great Asian cucumber salad that we often eat as a side, if anyone wants it.

Susan, dang - you and DH are like newlyweds! My DH would be so excited if I wanted to have sex so often LOL I don't know that I don't *want* to; I'm just tired at night. My DH could be dead asleep but rally quickly if the opportunity presented itself...always at the ready!

Priscilla, I hate waking up so disoriented. Defeats the purpose of the resting, right? I hope Daniel sleeps better tonight. Sometimes I wish these little ones could talk, so we could stop guessing about the problems (esp. in the middle of the night!).

Jen, sounds like you had a very busy day at work. I hope the plague is lifting at your house. We have been passing around variations of the same freaking cold since the beginning of December. I've been clear for 2 weeks, but now DH has the chills and sinus pressure with a queasy stomach. Rock on -- here we go again!

The kids and I had a nice day with my aunt today. She treated us to lunch at Cheesecake Factory and then treated me to a beautiful bracelet to celebrate my two kids :)

Eats today --
1: 1 cup Stoneyfield low-fat yogurt with 1 cup strawberries and blueberries; 2 melba toasts
2: Luau Salad with no crispy wonton, Bleu cheese dressing on side, 1 slice bread with no butter
3: Fiber 1 bar, red Starburst jelly beans
4: 3 turkey meatballs (totaling 160 calories)
5: 3 Ryekrisps, 1 Laughing Cow Light wedge, 3 slices Dietz & Watson low-sodium turkey, 1/3 cup cucumber slices
6: 3 small clementines

And I only had 3 samples at Costco today -- a bite of fish, 2 Pretzel Crisps with Spinach Dip, and some Indian chickpea thing by TastyBites (I LOVE their Madras Lentils -- yum!). I was very proud of my restraint LOL

Allison thanks for the recipes. I make Barfoots Lentil Sausauge soup minus the sausgae all the time....I put turkey sausage in it for dh and he loves it itoo! Its very good!
My dh is the one with the major libido..I would say Im "in the mood" 75% of the time that he is..and when Im not into it...I get into it once into it...haha..did that make sense??? Im tired too sometimes at tnight....but figured out if I push through I ususally have a dang good time lol

I do have a slight head cold..but nothing major yet. dh keeps saying its gonig to get worse like his. Well if this is a major head cold that he had he's a wuss lol.

disk 12 today. I can't believe I will be done with meso 1..and didnt miss one workout! Im starting again next week for 4 weeks..then start charlene. I have see major results in my arms from meso 1...dh has mentioned it a few times too.

House showing is at 5:30..so today will be not messing up the house! Off to drink coffee
 
Morning ladies! James sleot thru a thunderstorm last night! YAY! I woke up thinking "Oh man, this is going to scare him or wake him up" but nope!

Allison, thanks for the lentil recipes. I will have to try one of them soon. It's starting to get too warm here in FL for soup though. I'll have to wait for those rainy days. That was very sweet of your aunt to get you a bracelet. I was hoping for some jewelry from DH or one of the grandmas after James was born but no such luck. Maybe DH will surprise me for Mother's Day???

Susan- I find that most of the time when I dont think I am in the mood and I go ahead with it that I will be pleasantly surprised. :D I think sometimes we need to get out of our own heads and just go with it sometimes. Thank goodness DH's plague is going away and his libido has returned. We are off together all weekend.... :p I think I am starting week 3 over again this week. I only did the first disc last weekend so I will start fresh. Way to go on nice arms! And good luck on the showing!

Melanie- Your eats look good. Do you make your own sandwiches? Don't know why I am asking, just curious. Way to go for working out before work! I always feel so accomplished even before the day starts.

Priscila- So sorry about Daniel. I hope you got much more sleep last night. I found that when James wakes up so much in one night that he was usually going thru a growth spurt like someone suggested.

Christine- I love stir frys! Have anymore recipes? How did you do with the Nilla wafers? My boss had some of those yesterday and they looked good. Are you done PMSing? I feel much better these last two days. This week just sucked but at least its coming to an end.

Oh and I gave James more cereal last night and he did great! He opened his mouth as the spoon came to his lips and tried to grab the spoon and help me. He made some faces but ate about a total of 3-4 tbsp. I bought a ton of veggies last night to start making some baby food. Sweet potatoes were on sale so I might start with that this weekend to see how he does. I am so exctied for this next step!

Ok well off to work! I have meetings today and lots of documentation to do from all the cases yesterday but I will check in! Have a great one!
 
jen- i have lots of stir fry recipes and will post them this weekend. i cook a lot of asian flavors, i love ginger and garlic! way to go james on sleep and food. so exciting! jimmy loved sweet potatoes and carrots best as a baby. i started with them. he ate them a lot to the point his nose would get yellow from messy eating! all that beta carotene!
allison- yes yes yes on the cucumber sald recipe. i love cucumbers!
priscilla- i went back and did pusg circuit 3 yesterday. i love that one. hope you got some sleep. our babies are on the same program. poor us! at least we are in it together!
susan- hope the house sells so you get back to mississippi!!!!

lisa- i pack lunch for dh every day and can give you some easy ideas. i pack most of them on sundays and add frsh stuff the night before... there is a great weight watchers recipe with egg beaters that i make and it is great. it keeps you full for hours. it has egg beaters, lean ham, a little shredded potato, peppers and scallions. let me know and i will find it for you.
john skipped his afternoon nap yesterday so went tpo bed too early and got up at 4:30 today. ack. i am going to run soon since i think i will crash and burn at naptie! i want to go to the mall, i have a bunch of gift cards from christmas, and might get some new bras and panties! va va voom!

just checking in quick. I'm really not sure what I want to do for a workout today..maybe an off day?? It's 915 andDH is still sleeping, which means I haven't gotten much of anything done this morning. I hate that.

Reese had a tough night. Up for 2hrs then I passed her off to DH. She pooped soon after, so I'm guessing it was her belly keeping her from being able to fall asleep. About an hour after that, Caden woke with tooth troubles, so my mind isn't quite awake yet.

Allison-I love the salads at Cheesecake Factory! Too bad (or not, I guess) that the nearest is almost 2hrs away. We've also been passing around a cold all winter, and Caden seems to have a permanent gunky nose.

Jen-that's great James slept through the storm. It's crazy what they can sleep through sometimes. I hate storms here, as our house isn't very well insulated--during big storms, I feel like I might as we'll be outside!

you snuck in, Christine. I'd love any ideas you have for lunches and snacks--especially things that can be prepped a few days in advance. I get tired of the same things all the time. The turkey and blqack bean rollup sounds good. I hate pcking my lunches because I feel like I need SO much food to get through the day!
 
Jen- BTW, I passed on the nilla wafers, yay fo rme! I did have a bowl of strawberries with Activia yogurt and some chocolate chips sprinkled on top. Not perfect, but better! It was so yummy!~
Lisa- You bet. I will get you the recipes, which are super easy, they are usually a result of whatever is in th efridge. I use the Carb Balance high Fiber tortillas, they are almost 20g of fiber a piece. I will post variations for you.
 
Operation Insanity is COMPLETE!! Yahoo! I will try my best to get to post office today...otherwise it'll be Tuesday.

I'm excited about my run today. I hope it goes well. My training partner texted me about a bad run. She had to walk most of a 4 mile run & even poo'd in the woods. LOL It makes me feel better that it happens to other people too...otherwise I second guess my fitness level and such. I'm so comptetive & hard with myself. *sigh* personality-thang.

Okay, who ate "fiber poptarts" or something like that? I just can't get past the idea that "pop tarts" are now healthy? LOl

Christine, I take caffiene tabs now that I rarely drink Mountain Dew. I know it's unhealthy but with 5-6 hrs sleep/night I get worn down. At least I don't indulge in all the sugar, HFCS, and empty calories. I know, I know, barely better....something I need to work on!

I think I'll make the lentil tacos on Sunday. We're having roasted chicken & asparagus/pepper/leek/garlic veggies for dinner. His name is Lion in the Kitchen (he's on Fit TV)....I think I called him Lamb in the Kitchen. LOL I'm such a dork. :p
