What is your favorite Cookie Recipe for Christmas ?

I ask for curiosity AND because I'm participating in a cookie swap, and wanted ideas! :rolleyes:
 
These are my fav's... Lemon bars aren't exactly cookies, but anything with lemon is OK in my book!

Russian Tea Cakes 350 degrees for 15-17 min

1 c. butter (soft) 2 1/2 c flour
1/2 c pow. sugar 1/4 tsp salt
1 tsp vanilla 1/2 c pecans or walnuts (finely chopped)

spray PAM on cookie sheet
Cream butter, add pow sugar and vanilla. Add flour and nuts.
Mix well and form into (1 inch) balls, bake 15 - 17 minutes.
Cool and roll in pow sugar. Roll in pow sugar again before
serving. (Mom's hint: Don't over bake, Check the bottom of
cookie to see if it is light brown, and it will be done.)




Lemon Bars 350 degrees

1 c butter (soft)
dash salt
1/2 c. pow sugar
2 c. flour
Combine ingredients and press into a pam sprayed 9 x 13 pan.
Press gently, do not pack hard or your "base cookie" will be hard
like a sugar cookie and hard to cut. . . .trust me on this one :)
Bake this for about 23 minutes or a little brown around the edge.
Take out of oven and let cool a few minutes.

4 eggs, beaten
2 c. sugar
1/4 c flour
1/2 c lemon juice
1 Tblsp lemon extract
Mix and pour on slightly cool crust; bake again for about 25 minutes.
When cool, sift pow sugar over top. may do again before serving.
 
WARNING:eek: These would not be considered "clean" food. They are some of the few things that I simply don't bother to lighten!

My traditional cookies are the one my mom used to make. My favorite: pecan tassies.

This one is my family's favorite: chocolate walnut squares.
1cup(s) butter
1/2 cup(s) brown sugar
2 egg yolks
1/2 cup(s) white sugar
1 teaspoon(s) vanilla
1 cup(s) sifted flour
1cup(s) rolled oats
9 ounce(s) Hershey bars (or 243 g)
2 tablespoon(s) butter

Work butter til creamy

Add sugars, vanilla, egg yolks

Beat til light

Stir in flour and oats thoroughly

Spread in 1 9x13 pan

Bake at 350 for 20-25 minutes til brown

Remove from oven and let stand 15 minutes

Meanwhile, melt the chocolate and 2 T butter. When smooth spread over cookies


Sprinkle with ground nuts

Cut into square while warm

Cool--store in tight container
 
Oh! I love baking cookies almost as much as eating them :p

I like to make a cookie my great aunt used to send my siblings and I each Christmas. She called them Toothpaste Cookies! They are just Merigue cookies with mini chocolate chips, green food coloring and peppermint extract added. Everyone really enjoys the looks, taste and name of these. I have seen recipes where people do red food coloring and add crushed candy canes also.

I love Russian tea cookies also!!! My girls just like to roll cookies in powdered sugar :D

These are my favorite cookies and I always get lots of compliments on them.

NEIMAN-MARCUS COOKIES (Recipe may be halved)
2 cups butter
24 oz. Chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. Soda
1 tsp. Salt
2 cups sugar
1 8 oz. Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp. Baking powder
2 tsp. Vanilla
3 cups chopped nuts (your choice)
Measure oatmeal, and blend in a blender to a fine powder. Cream
the butter and both sugars. Add eggs and vanilla, mix together with
flour, oatmeal, salt, baking powder, and soda . Add chocolate chips,
hershey bar, and nuts. Roll into balls, and place two inches apart
on a cookie Sheet. Bake for 10 minutes at 375 degrees.
Makes 112 cookies.

(except I bake mine for 8 minutes I don't like them too brown:)

My husband's Nana's Anise cookies with butter cream frosting on top. Their kind of licorice-y flavored, but not overwhelming, and the sweet butter cream frosting on top cuts the bitterness of the cookie. SOOOOOOOOOOOOO good. She gave me the recipe, but it's hugely complicated.
 
All these fancy cookies sound so GOOD!!!:D My favorite are Pooh Sugar Cookies. I found the recipe on the box that the video (yes, video not DVD) came in some 12 yrs ago & it is so good. I make them thicker & soft. We have a cookie frosting day (which was yesterday) with the daycare kids. I make a HUGE batch, several colors Cr cheese frosting & tons of decorations to top them off because they don't have enough sugar. LOL They are ssssooo good. This is the only time I make them throughout the yr.
Of course after the way the kids were bouncing around after eating them yesterday I'm thinking next yr they don't eat them until they go home !! ;)
 
Oh my gosh! Thank you all! I wish WE all could have a cookie exchange, your cookies make my mouth water!!

I think I may do what seems one of the easiest and different for me, the Creme de Menthe Cookies, for the exchange! But I may do some of the others for Christmas for my family

I made the Creme De Menthes and they were SOOOO good! (Though you *only* get 3 and 1/2 dozen). Awesome recipe , thanks!

I might try the PB/Choc Chip ones OR maybe Oatmeal Choc Chip... Decisions, decisions...
 
The Ultimate Oatmeal Cookie from Cook's Illustrated. Instead of dried cherries, I use dried cranberries, regular and golden raisons along with chunks of dark chocolate.

Instead of using molasses, I sub honey. I cut these cookies using a Christmas tree shape and frost with a cream cheese, orange frosting. The frosting is no longer listed on their site.
 
The pecan tassies are my favorite but we make them with walnuts. I also like butter balls. Sorry I don't have the recipe here. And someone just gave my DH a bag of popcorn that was covered with chocolate and peanuts. Take two good for you foods and cover them with chocolate. I say that is still clean eating!! It is delicious.
 
I'm a cookie monster and have sooooo many "favorites."

Here is one I discovered this Christmas. If you like lemon cookies or lemon bars then this one is for you:

SLICE AND BAKE LEMON GEMS

3/4 cup butter, softened
1/2 cup confectioners' sugar
1 tablespoon grated lemon peel
1 cup all-purpose flour
1/2 cup cornstarch
1/4 cup colored nonpareils (the colored ball-shaped sprinkle things)

Lemon Icing:
1 cup confectioners' sugar
2 tablespoons lemon juice
1/2 teaspoon grated lemon peel

In a small mixing bowl, cream butter and confectioners' sugar until light and fluffy. Beat in lemon peel. Combine flour and cornstarch; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour or until easy to handle.

Shape the cookie dough into a 1-3/4 inch diameter roll; roll in nonpareils. Wrap in plastic wrap. Refrigerate for 2-3 hours or until firm.

Unwrap dough and cut into 1/4 inch slices. Place 1 inch apart on ungreased baking sheets. Bake at 375 degrees for 9-11 minutes or until set and the edges are lightly browned. Cool for 1 minute before removing to wire racks to cool completely.

In a small bowl, combine icing ingredients. Spread over cooled cookies.

* These freeze really well. I love to eat them right out of the deep freeze.

* They are PERFECT for gift giving. Look super pretty on a cookie tray!

* Lastly, they are AWESOME! If you're a fan of lemon desserts, then you must try these.
