MStar- I too am a big believer in the use of saturated fats. Butter is used to treat fatty liver syndrome. Grass fed beef has a completely different lipid profile from grain fed beef. Its unnatural for a cow to be eating corn. Its just odd. Gayle's links are great. Fat is not for everybody (people with digestion issues such as those without a gal bladder.) but for a good percentage of us it really helps with our health. Coconut fat is a saturated fat and has been found to be tremendously helpful in the treatment of alzheimers. (spl?) You can check out Jimmy Moore's blog on low carb. He has a lot of links to different websites, studies, and other blogs on the subject of low carb and high fat diets. Some people are able to go with just a high protein diet, but for me personally that did not work out because of my genetics I ended up with kidney stones/sludge. And the high carb thing went out with the butt floss:p

I just posted a new post about something I just found out. I will need to eat what you can call an endometriosis friendly diet, which a lot of you seem to eat close to it anyway. I am weak when it comes to eating right, I love vegies and fruit, but processed crap more. I will have to eat this way in order to feel better, I've been thinking I'm allergic to everything and it winds up everything I eat ok, not everything, but a lot is not what I should be considering my health condition.

Hi morningstar - Yes, I am doing it with intent. Yes, it goes against the grain of everything we've been. But there is a lot of info supporting that what's been previously taught regarding saturated fat is...inaccurate, to say the least (formulated with cherry picked and manipuated data might be a better description). Here's some reading material about it (no way I could explain it sufficiently)

BTW, what I consume is almost all organic grass-fed, quality definitely counts.

I completely agree with you Gayle, lots of great stuff at the Weston Price site. One the best *saturated* fats that I love is coconut oil. I use this to scramble eggs with, melted and poured in water to mix with protein, and I substitute it for butter when I bake. Grass fed beef is one of the best sources of B12 and iron. I'd rather eat real then synthetic. I'm going to be contracting for raw milk this spring, and was wondering what you thought about the taste?

We switched to raw milk around Christmas time, and DH and I both really like the taste. We were drinking pasteurized whole milk before, and liked that fine, but this tastes better...I can't explain exactly how it's different, richer maybe.
