Hi Colleen,
I wanted to post here an answer to your question because I refuse to reply on the other thread. It's interesting you asked this question. I just read two articles about it. From my understanding of both of them the majority of the nutrients of an egg come from the yolk. Additionally, the yolk contains a cholesterol lowering agent called lecithin, one of the few places in nature that this nutrient is found. Additionally, organic eggs have omega-6 to omega-3 balance of 1:1. Therefore, the amount of cholesterol is canceled out making the egg a neutral food. Most people, however,stopped consuming them because of being told, that they would cause high cholesterol, which upon further study has been recanted. Another reason many others will eat one yolk with added extra whites is because of the amount of protein found in the white, without the extra calories found in the yolk. All in all, there is no medical harm in eating an egg. My information is from Dr. Fred Pescatore, M.D., MPH, CCN. He wrote an article in Diet & Fitness, the February/March 2006 issue. Additional, thoughts were taken from the South Beach Diet book.

This is my personal opinion now~ Eggs are fine to eat. I just suggest eating organic eggs because I think they are at least a little closer to natural state. That, however, is just my opinion and you can take that for what it is worth. I hope I helped a little! :+

Thanks for all the info! Very helpful! I do try to buy the cage free with Vit E and Omega-3's. They say they are natural, but does not say organic. I love eggs and the yolk! I always wondered if there were too many calories or fat in the yolk which may be why people avoided them, so it would not interfere with diet goals.

I always buy the organic, cage-free Omega-3 eggs. I get them at Whole Foods or at a local health food store. Even the color of the yolk is brighter than a normal egg!

Oh, I eat 2 eggs nearly every day! :9
