That sounds great. How do you prepare the salmon? I have had salmon 2 nights in a row. And I love avacado! I scrolled through the thread but didn't find that recipe. Did I overlook it?

HEY! There's no recipe... I've posted a few days meals throughout the thread and she got the idea from that. I just take a small 3-oz can of water packed tuna or some canned salmon and mash a quarter of an avocado into it. It holds it together so I can sort of form it into a patty and put it on bread or in a whole wheat pita bread. I add tomato and spinach leaves, and a side salad... it makes a great lunch that I eat 2 or 3 times each week! Another of my favorite lunches is a bean sandwhich. I take 1/2 c of either black or great northern beans and mash them up, and put them on whole wheat bread with spinach, tomato, and a slice of lowfat soy cheese. It is so good! And a hefty dose of fiber, protein, and energizing carbs from the beans! And the bread + beans makes complete protein. It's really good. I'm sure beans mashed with the avocado would be good, too. Love that healthy fat! :0) Happy eating! And please, share your meal ideas! I love hearing about what everyone eats!
 
Here's my typical day:
Bkfst: special K (1 1/2 cups) 1 cup skim milk, 1/2 banana and strawberries
Lunch: turkey sandwich (2 oz turkey or tuna) (on lite bread) w/ low fat mayo or tuna salad on salad with low fat mayo and celery
pretzels, and small tomatoes and 1 pc of fruit
Snack: 8 aniamal crakers and 8 oz skim milk
Dinner: 3 oz lean meat, 2 servings veg's and 2 svgs bread (potato, rice, pasta). 1 pc fruit
That's a typical day. =1400 cals

Hey Faythe!

Have you seen the new "Special K" cereal that comes with strawberries in it? I LOVE them. They are dehydrated of course, but still good. I like having them as a snack too. Just thought you'd like to know!
