What did you make for dinner???

I made these amazing soft tacos -- super healthy with seasoned soy, black beans, romaine lettuce, red peppers, red onion, corn salsa, and a little cheese. Even my 7-yr-old loved them! What about you guys? What healthy dinners did you whip up tonight???
 
Whole wheat spaghetti with fresh tomatoes, fresh parmesean and a little olive oil. Salad on the side :)

Ooh, Delfin, that sounds absolutely yummy!

For me it was grilled honey lime tuna steak, steamed broccoli, summer squash and carrots, and a little homemade tabbouleh (my first attempt and pretty darn good, too). The best thing...I have leftovers for tomorrow and maybe the next day :9 :7 .

Just curious as to what is a Bosnian salad? Is it something specific to the country Bosnia? I haven't heard much about cuisine from that area. If it is like other Slavic countries - I bet it has lots of peppers...

Oh - I had a mixed greens with olive oil and lemon juice swirled on top...3 Kalamata olives and a bit of feta cheese...and one bbq'd pork chop - marinated same as salad.
 
UMMMM, I'll take a piece of that tuna, please. We had unhealthy ham steak and mac and cheese. But we did have garden fresh steamed green beans with that.
 
I heated up a whole roasted chicken I bought already prepared from the grocery store. I had that with a sweet potato. I'm putting the leftover chicken in a salad for dinner tomorrow.
 
Colorful stuffed green peppers......It has ground beef/rice/salsa/corn/ etc....

I went to a Vietnamese restaurant and had soup. It's a spicy broth with lots of very fine rice noodles, shrimp, crab, some kind of Oriental lettuce stuff, tomatoes - YUM!
 
Leftover chicken + leftover brown rice + veggies almost destined for the compost + homemade broth = my solo dinner. Family's gone tonight:-(

But yummy...
 
I had McDonalds Big Mac a large shake and a medium fry..........

GOTCHA:p :p I really had a veggie salad, steamed broccoli and green beans with no butter, and package of Wild Alaskan Salmon (21 grams protein:9) with a slice of whole wheat bread.

Beans are good Christine!!..:)...I made Wheat Meat Stroganoff (using seitan), spinach noodles and a big green salad with olive oil and vinegar dressing.....and a fruit smoothie for dessert...:)
 
We had grilled salmon seasoned with teriyaki sauce, salad, and
steamed asparagus. But we also had those yummy Parkerhouse rolls
with dinner! That doesn't count as healthy eating, but they were
divine!
 
This one is a new fav! Can be easily adjusted for however many people you are cooking for (it was just me last night.)

one red bell pepper
two smallish (plum or other) tomatoes
one chicken breast (or white fish fillet)
fresh basil
one glove fresh garlic
olive oil

Cut the pepper in half, remove core and seeds. Place in a baking dish, cut side up. Tear a few basil leaves and sprinkle into the pepper. Slice the garlic very thin and place a few slices into the pepper. Cut one tomato in half and place one half in each pepper half. Make a few deep cuts into the chicken breast, but not all the way through. Place the chicken breast (or fish) into the dish alongside the peppers. Chop up the other tomato, place over the chicken along w/ the rest of the garlic slices and a few more torn basil leaves. Season all well w/ salt & pepper, then drizzle a little olive oil over all. Roast @ 220C for 25-30 min.

Tres yum! You can serve just by itself, w/ couscous alongside (my fav) or anything - use your imagination.
