What did you make for dinner???

DH had a steak, baked (white) potatoe and corn.
I had the corn, baked sweet potatoe and a salad with a veggie burger crumbled into it. :9

We ordered chinese food. I had steamed seafood and veggies. No sauce, no rice. I added chinese mustard and soy sauce.

****This one is a new fav! Can be easily adjusted for however many people you are cooking for (it was just me last night.)

one red bell pepper
two smallish (plum or other) tomatoes
one chicken breast (or white fish fillet)
fresh basil
one glove fresh garlic
olive oil

Cut the pepper in half, remove core and seeds. Place in a baking dish, cut side up. Tear a few basil leaves and sprinkle into the pepper. Slice the garlic very thin and place a few slices into the pepper. Cut one tomato in half and place one half in each pepper half. Make a few deep cuts into the chicken breast, but not all the way through. Place the chicken breast (or fish) into the dish alongside the peppers. Chop up the other tomato, place over the chicken along w/ the rest of the garlic slices and a few more torn basil leaves. Season all well w/ salt & pepper, then drizzle a little olive oil over all. Roast @ 220C for 25-30 min.

Tres yum! You can serve just by itself, w/ couscous alongside (my fav) or anything - use your imagination.

MMmmmmm, this sounds good. I might try it tonight.:)

I had a lazy dinner last night.

Cottage Cheese
lowfat yogurt
bran buds

All mixed together

I had granola for dinner yesterday! I don't do it very often, but it was just one of those days. (A very healthy, whole grain granola with spelt).

Carole-

The wheat meat stroganoff with the seitan sounds really yummy. Do you mind giving me the recipe??? Thanks!!!

Oh man I was thinking about this thread last night b/c King's had lobster on sale for $6.99 a lb, & if you call ahead they boil & crack it for you. So I had a lobster dinner last night for under $15. :)

The bad news was, when I got home & unwrapped it, it still had the eyes & antennae on it! I felt like it was looking at me! So I just had to remove all the meat & ditch its body.

But I must say, it was deeeelicious!:9

I seasoned and grilled a whole chicken on the grill and steamed broccoli and greens beans. I also made homemade baked fries for DH and kids but I ate a garden salad with cukes and mushrooms.

Grilled, marinated chicken, yellow squash, cauliflower and a tossed salad with 1/2 oz of feta. I make good seasons dressing but with half vinegar, half water and a tablespoon of oil. Yummy and low fat.

DH skipped the cauliflower but had a baked potatoe.
